Easy Vegan Taco Bowl
I am not sure why bowls of grains and vegetables were not present in my pre-vegan life, but I am thankful for them in my vegan lifestyle! The variety and combinations are endless. Here is just one version of our Vegan Taco Bowl.
Ingredients
- Rice, cooked according to package instructions (we use a rice cooker, grab it here)
- 1 zucchini, chopped
- 2 cans of blackbeans, drained
- cumin
- oregano
- 2 cloves of garlic, minced
- cilantro, chopped
- lime wedges
- avocado, sliced
- tomato, diced
Instructions
- Cook Rice
- Saute zucchini and garlic in water
- Add beans, cumin, and oregano and cook until tender
- Stir in chopped cilantro and juice from half a lime
- Plate taco bowl - rice, zucchini & beans, avocado, tomatoes
- Drizzle (or douse depending on preference) with hot sauce

This was great paired with vegan Mexican Street Corn and a little dollop of vegan sour cream or this Cashew Sour Cream!
