I’ve been loving this plant-based peach baked oatmeal for a few months now. The sweet and juicy peaches and the balance of flavor with the hint of cinnamon and vanilla.  Sometimes I add a little splash of plant-based milk to the baked oatmeal for a little more creaminess.

The Plant-Based Baked Oatmeal Recipe

This recipe is inspired by the Mixed Berry Baked Oatmeal in my Budget-Friendly Plant-Based Diet Cookbook, but without all the extra “frills”. I wanted a super simple, low ingredient, lower fat breakfast, so I tried it with just a few ingredients, and it worked. 

We start with 3 cups of organic old-fashioned rolled oats and then add in 2 cups of plant-based milk (I like oat-milk), 3 tablespoons of maple (although I have forgotten to add it and it turned out fine, I drizzle it with maple when I serve it anyway), cinnamon, and vanilla.  I like to mix all those ingredients and then add about 1/4 -1/2 the 10 oz bag of frozen peaches and stir them in.  Then I transfer the mixture to my baking dish and top with the remaining peaches. Then I pat the oat mixture into the baking dish with my rubber scraper. 

I bake the oat mixture, uncovered for about 50-55 minutes in a 350°F oven, until the center is firm-ish to the touch (I don’t like it mushy).  This method keeps the pieces intact, more cake-like.

The BEST part of this Peach Baked Oatmeal

My favorite part of this oatmeal is when I eat it the next day. I love to reheat it in my airfryer on 285°F for about 12-15 minutes. The edges get a little brown and crispy, but the inside stays moist and tender. It reminds me of a dessert, slap a scoop of nice cream on it and you could pass it as a hearty oat cake. lol!

Hearty baked oatmeal with sweet juicy peaches, this is a breakfast you could pass off as a dessert! YUM!

Ingredients

  • 3 cups old fashioned rolled oats
  • 2 cups plant-based milk
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • (1) 10 oz bag frozen peaches

Instructions

  1. Preheat oven to 350°F
  2. Mix oats, plant-based milk, maple syrup, vanilla extract, and cinnamon in a mixing bowl.
  3. Stir in 1/4-1/2 the bag of peaches.
  4. Transfer mixture to an 8x8 baking dish
  5. Add remaining peaches to the top.
  6. Bake uncovered for 50-55 minutes until the center of the oatmeal is firm-ish to the touch and the edges are slighly browned.

Notes

Reheats well in airfryer at 285°F for about 12-15 minutes.

Can mix all the peaches into the oatmeal mixture.

Can use other frozen fruits.
