Pizza Freekeh

This Pizza Freekeh recipe has left me almost speechless.  The combination of flavors, the rich texture of the freekeh, and the snuggly comfort of this hearty dish on a cold evening is amazing.  I mean a healthy pizza dish with healthy ingredients, that tasted delicious; the only words I could utter were, “when can we make this again?”

Why Freekeh

You are probably wondering, why freekeh?  Or maybe even, what is freekeh?  Well, we selected freekeh because of its texture and added health benefits with help.

 Freekeh is a roasted, cracked seed made from durum wheat (you could certainly sub a gluten-free grain if necessary).  This powerhouse grain has a savory flavor and high fiber content, which of course upped the satiation level of the meal and made it a super intense comfort-food dinner, which I love!

Pizza Freekeh

We paired our Bob’s Red Mill Freekeh with some pretty amazing products that we uncovered during our recent trip to the Natural Products Expo, Expo East.  Like Nuttin’ Ordinary Cashew Cheeze to give it that creaminess – so cheesy and so delish!   No Evil Plant Meat Italian Stallion Italian Sausage to bring in just the right amount of spice and to compliment the peppers, mushrooms, and onions – ya know, like a supreme pizza. Then we drizzled some 365 brand Pizza Sauce (which contains a bit of oil, so grab an oil-free brand if you are skipping the oil) and sprinkled with some Go Veggie Vegan Parmesan (a nut and nooch parm could be substituted for an oil-free option).   The result of this matchup was heavenly!

Rich Pizza Style Freekeh Bowl

Ingredients

  • 1 c freekeh, cook according to package instructions
  • 1 sm onion, sliced
  • 2 small peppers (we did 1 red, 1 green), sliced
  • 1 8oz white mushrooms, sliced
  • 1 pack No Evil Italian Stallion Sausage, sliced
  • 1/2 14 oz can black olives , sliced
  • 1 jar pizza sauce, warmed
  • 1 6 oz Nuttin' Ordinary Plain Cashew Cheeze

Instructions

  1. Cook Freekeh according to package instructions
  2. Saute the mushrooms until soft, set aside
  3. Saute the peppers and onions until soft, set aside with mushrooms
  4. Cook up your No Evil Sausage according to package instructions (for a quick oil-free method, microwave on high for 1-2 minutes or until cooked through). Add to veggies. 
  5. Add olives
  6. Once freekeh is cooked thoroughly, stir in the Nuttin' Ordinary to a creamy consistency.  The cashew cheese should melt and distribute evenly.
  7. Mix freekeh mixture with veggies and sausage.
  8. Drizzle on a nice portion of pizza sauce, sprinkle with Go Veggie, and serve.   We paired ours with a nice garden salad.
